Summer Salsa

This time of the year my mother in law's garden is exploding with so many veggies. We had a garden at our last home but since downsizing we haven't had the time to make our own. I always enjoy getting fresh ripe tomatoes and jalapenos from her. I save a few for sandwiches and tacos but the majority of them I use to make a summer salsa. 


Homegrown tomatoes taste so much better than store bought..wouldn't you agree?

I use about 10-12 tomatoes
2 jalapenos
1 onion
1/2 bunch of cilantro
lemon juice
garlic powder
salt and pepper


I cut all my ingredients into smaller portions and use a chopper to reduce it to smaller pieces. Add salt and pepper to taste and enjoy with some tortilla chips or as a garnish on chicken or fish. YUM! This makes about a jar and a half for me. I would love to can it someday but it just doesn't last that long in our house. 


Let the summer grilling, tortilla chip eating begin!

  5. Nice vegies! Always had a garden then my husband had a massive stork and it is difficult to do it all. I know I am Super Woman! lol Wrote down the salsa mixture. yuuuummmmy
